  • 2 pounds beef stew meat, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 3 celery stalks, sliced
  • 3 tablespoons tomato paste
  • 6 cups beef broth
  • 1 cup red apple vinegar (optional; can substitute with more broth)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons flour (optional; for thickening)
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef cubes until browned on all sides; remove and set aside.
  2. In the same pot, cook onion and garlic for 2–3 minutes until softened.
  3. Stir in tomato paste, return beef to the pot, and pour in beef broth and optional vinegar.
  4. Add carrots, potatoes, celery, bay leaves, thyme, paprika, salt, and pepper; stir well to combine.
  5. Bring to a boil then reduce heat to low. Cover and simmer for 1½ to 2 hours until beef is tender.
  6. For a thicker stew, whisk flour with water and stir into the pot during the last 15 minutes of cooking.
  7. Remove bay leaves before serving hot; garnish with fresh parsley.
