  • 12 ounces black pasta (squid ink or dyed linguine)
  • 2 tablespoons olive oil
  • 5 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • Optional: Grated Parmesan cheese and fresh basil leaves for garnish

Instructions

  1. Cook the black pasta in a large pot of salted boiling water according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Add garlic and optional red pepper flakes, cooking until fragrant (about 1 minute).
  3. Stir in tomato paste, then add crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10–12 minutes, stirring occasionally.
  4. Toss the cooked pasta into the sauce, adding reserved pasta water for desired consistency.
  5. Serve hot, garnished with grated Parmesan cheese and fresh basil.
