- 1/2 English cucumber, quartered lengthwise and sliced
- 3 cups cherry tomatoes, halved
- 8 oz fresh mozzarella pearls or 1 cup diced fresh mozzarella
- 1 large avocado, diced
- 1/3 cup fresh basil, chopped
- 3 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
- 1 garlic clove, minced
- 1/2 tsp fine sea salt (plus more to taste)
- 1/4 tsp freshly cracked black pepper
- In a large salad bowl, combine quartered cucumber, halved cherry tomatoes, mozzarella pearls, diced avocado, and chopped basil.
- In a small mixing bowl, whisk together olive oil and balsamic vinegar. Add minced garlic, salt, and pepper; mix well.
- Drizzle the dressing over the salad just before serving and toss gently to combine.
