  • ½ cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, finely chopped
  • 2 tablespoons cilantro, finely chopped
  • 1 tablespoon soy sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil or coconut oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons Thai red curry paste
  • 1 can (14 ounces) coconut milk
  • ½ cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar (optional)
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the meatballs by mixing ground chicken, panko breadcrumbs, egg, garlic, ginger, green onions, cilantro, soy sauce, salt, and pepper in a large bowl until just combined. Roll into 1-inch meatballs.
  2. Heat oil in a skillet over medium heat. Cook the meatballs until browned on all sides and nearly cooked through (6–8 minutes). Remove from skillet.
  3. In the same skillet, sauté garlic and ginger until fragrant. Stir in red curry paste and cook for another minute.
  4. Add coconut milk and chicken broth; stir well. Incorporate soy sauce and brown sugar (if using) and simmer for 5 minutes.
  5. Return meatballs to the skillet, cover, and let simmer for 10 minutes until fully cooked.
  6. Stir in lime juice before serving over rice or noodles, garnished with fresh cilantro.
