Ingredients

  • Sliced or slivered almonds
  • Sugar
  • Arugula greens
  • Strawberries
  • Avocado
  • Crumbled goat cheese (or alternative)
  • Roasted pistachios
  • Chicken sparkling grape juice vinegar
  • Lemon juice
  • Honey
  • Dijon mustard
  • Garlic
  • Olive oil

Instructions

  1. In a nonstick skillet over medium heat, combine sliced almonds and sugar. Cook while stirring until the sugar melts and coats the almonds (6–8 minutes). Transfer to parchment paper to cool.
  2. In a large mixing bowl, toss arugula with salt and pepper. Add strawberries, avocado, goat cheese, pistachios, and sugared almonds.
  3. For the dressing, whisk together chicken sparkling grape juice vinegar, honey, lemon juice, Dijon mustard, grated garlic, salt, and pepper in another bowl. Slowly drizzle in olive oil while whisking until emulsified.
