  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Fresh parsley flakes for garnish

Instructions

  1. Preheat oven to 385°F (195°C) and line a baking sheet with parchment paper.
  2. Wash the mini potatoes and set aside.
  3. In a bowl of cold water mixed with lemon juice, carve skull faces into each potato to prevent browning.
  4. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  5. Toss the drained carved potatoes in the seasoning mixture until evenly coated.
  6. Place seasoned potatoes on the prepared baking sheet with faces up and bake for about 30 minutes until golden brown and tender.
