  • 20 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the jumbo pasta shells in salted boiling water until al dente, drain, and set aside.
  3. In a mixing bowl, combine ricotta, mozzarella, Parmesan, egg, chopped spinach, garlic, salt, and pepper until well mixed.
  4. Spread 1 cup of marinara sauce in the bottom of the baking dish. Stuff each shell with the ricotta mixture and arrange them snugly in the dish.
  5. Pour the remaining marinara sauce over the shells and sprinkle with extra mozzarella.
  6. Cover with foil; bake for 25 minutes. Remove foil and bake an additional 10 minutes until bubbly.
  7. Garnish with fresh basil or parsley before serving.
