  • 4 large russet potatoes
  • 2 tablespoons butter
  • 1/2 cup milk or heavy cream
  • 1/2 cup shredded cheddar cheese (plus extra for topping)
  • 1/2 teaspoon Old Bay seasoning (or paprika)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil (for seafood)
  • 1/2 pound shrimp, peeled and chopped
  • 1/2 cup lump crab meat
  • 2 cloves garlic, minced
  • 1/4 cup green onions, chopped
  • 1/4 cup sour cream
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the russet potatoes, pierce them several times with a fork, and bake on a tray for 50–60 minutes until tender.
  2. Let cool slightly, then cut each potato in half lengthwise and scoop out flesh into a mixing bowl.
  3. Mash the potato flesh with butter, milk (or cream), shredded cheese, seasoning, salt, and pepper until smooth.
  4. In a skillet over medium heat, cook shrimp and crab with minced garlic in olive oil until shrimp turn pink. Stir in green onions before removing from heat.
  5. Combine the seafood mixture with the mashed potatoes and sour cream until well mixed.
  6. Spoon the mixture back into each potato shell, top with extra cheese, and bake again for 15 minutes or until golden.
