  • 1/2 cup canned pumpkin puree
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup butter, melted
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • vegetable oil for frying
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.
  2. In another bowl, combine the pumpkin puree, melted butter, egg, and vanilla extract. Mix until blended smoothly.
  3. Gradually add the pumpkin mixture to the dry ingredients. Stir until you form a smooth dough.
  4. Heat vegetable oil in your frying pan or deep fryer to 350°F (175°C).
  5. Fill a pastry bag or Ziplock bag with the pumpkin dough. Cut off a small tip at the end.
  6. Squeeze out small bites of dough into the hot oil. Use scissors to cut them into even sizes. Fry for about 2-3 minutes or until golden brown, flipping halfway through for even cooking.
  7. Remove churro bites with a slotted spoon and drain on paper towels.
  8. In a small bowl, mix together 1/4 cup granulated sugar with 1 tablespoon ground cinnamon. While still warm, roll each churro bite in this mixture until evenly coated.
