  • 1 ½ pounds tomatillos, husked and rinsed
  • 4 poblano peppers, roasted, peeled, and seeded
  • 2 jalapeños, roasted or fresh (adjust for heat)
  • 1 medium onion, chopped
  • 4 garlic cloves, peeled
  • ½ cup fresh cilantro leaves
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 cup chicken or beef broth
  • 2 ½ pounds beef chuck roast, cut into 1 ½-inch cubes
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups beef broth

Instructions

  1. Preheat the broiler to high. Roast tomatillos, poblano peppers, jalapeños, onion, and garlic on a baking sheet for 8–10 minutes until charred.
  2. In a blender or food processor, combine the roasted vegetables with cilantro, cumin, oregano, and broth. Blend until smooth; season with salt and pepper.
  3. Season beef with salt, pepper, and cumin. In a Dutch oven, heat oil over medium-high heat and brown the beef on all sides.
  4. Pour the sauce into the pot and add browned beef with additional broth. Bring to a boil then reduce heat to low and simmer covered for 1 ½–2 hours until tender.
