  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 cup milk
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons ketchup
  • 2 tablespoons vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 2 cups beef broth
  • 2 tablespoons all-purpose flour
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare your baking pan.
  2. In a large bowl, whisk together milk and eggs, then mix in breadcrumbs, onion, garlic, ketchup, vinegar, salt, pepper, and thyme.
  3. Gently fold in the ground beef until just combined.
  4. Shape into a loaf and bake for 50-60 minutes until an internal temperature of 160°F (71°C) is reached.
  5. For the mushroom gravy: Sauté mushrooms in olive oil and butter until golden; add garlic and flour, cook briefly before whisking in beef broth and seasoning.
  6. Let the meatloaf rest before slicing and serve with mushroom gravy on top.
