1 cup breadcrumbs
2 large eggs
1 cup milk
1 medium onion, finely chopped
3 garlic cloves, minced
2 tablespoons ketchup
2 tablespoons vinegar
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
2 tablespoons unsalted butter
1 tablespoon olive oil
8 ounces mushrooms, sliced
2 cups beef broth
2 tablespoons all-purpose flour
½ teaspoon dried thyme
Salt and pepper, to taste
Instructions
Preheat the oven to 375°F (190°C) and prepare your baking pan.
In a large bowl, whisk together milk and eggs, then mix in breadcrumbs, onion, garlic, ketchup, vinegar, salt, pepper, and thyme.
Gently fold in the ground beef until just combined.
Shape into a loaf and bake for 50-60 minutes until an internal temperature of 160°F (71°C) is reached.
For the mushroom gravy: Sauté mushrooms in olive oil and butter until golden; add garlic and flour, cook briefly before whisking in beef broth and seasoning.
Let the meatloaf rest before slicing and serve with mushroom gravy on top.
