  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 ball burrata cheese (approx. 4 ounces)
  • Optional: chopped toasted pecans or walnuts, fresh thyme leaves or parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss sweet potato cubes with olive oil, salt, and black pepper until evenly coated. Spread in a single layer on the baking sheet.
  3. Roast for 25–30 minutes, flipping halfway through until tender and caramelized.
  4. Meanwhile, whisk together Dijon mustard, maple syrup, and apple cider vinegar in a small bowl to create the glaze.
  5. Once the sweet potatoes are done, transfer them to a serving platter and drizzle with the glaze. Top with torn burrata cheese and optional nuts and herbs.
