  • 4 boneless skinless chicken breasts

  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound the chicken breasts to an even thickness; season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat; cook chicken for 3-4 minutes per side until golden brown. Remove from pan.
  3. In the same pan, sauté minced garlic until fragrant; add chicken broth, lemon juice, and zest, scraping up browned bits. Bring to a boil, then reduce heat and stir in heavy cream. Simmer for about 5 minutes.
  4. Add spinach to the sauce; cook until wilted. Return chicken to the pan, spooning sauce over it. Sprinkle with Parmesan and cover for another 2 minutes.
  5. Serve garnished with lemon slices and extra Parmesan.
