  • 5 slices Turkey Bacon (chopped)
  • 2 tablespoons butter
  • 1 tablespoon fresh basil (roughly chopped)
  • 1 tablespoon fresh thyme (roughly chopped)
  • 1 tablespoon fresh oregano (roughly chopped)
  • 1 tablespoon fresh rosemary (roughly chopped)
  • 5 cloves garlic (minced)
  • 2 cups sliced carrots
  • 1 medium sweet yellow onion (diced)
  • 3 tablespoons tomato paste
  • 1 tablespoon flour
  • 4 cups chicken broth
  • 1 can (28 oz) peeled, whole tomatoes
  • 1 tablespoon red apple vinegar

Instructions

  1. In a large pot over medium heat, cook the chopped turkey bacon until crispy, about 10 minutes. Add butter and let it melt.
  2. Stir in the fresh herbs and garlic; sauté for 2-3 minutes until fragrant. Then add carrots and onion, cooking until softened (about 10 minutes).
  3. Mix in the tomato paste stirring continuously for another 2-3 minutes before adding flour.
  4. Pour in chicken broth and crushed tomatoes; stir in red apple vinegar and bring to a boil. Reduce heat and simmer for 30-45 minutes.
  5. Blend the soup in batches until smooth, then serve with a dollop of burrata on top.
