  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp salt
  • 1 3/4 cups almond milk (or non-dairy milk of choice)
  • 2 eggs
  • 1/3 cup pure maple syrup
  • 2 tsp pure vanilla extract
  • 3/4 cup shredded carrots
  • 1/2 cup raisins
  • 1/2 cup chopped pecans (or other nuts)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 casserole dish.
  2. In a large bowl, mix together rolled oats, baking powder, cinnamon, ginger, and salt.
  3. In another bowl, whisk almond milk, eggs, maple syrup, and vanilla extract until smooth.
  4. Stir in shredded carrots along with half of the raisins and pecans into the wet mixture.
  5. Combine the wet ingredients with the dry ingredients until fully incorporated.
  6. Transfer to the greased baking dish and press down firmly to soak all oats.
  7. Top with remaining raisins and pecans before lightly pressing them down.
  8. Bake for about 40-45 minutes until golden brown on top.
  9. Let cool for five minutes before serving.
