  • 137 grams super fine almond flour
  • 117 grams confectioners' sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 100 grams egg whites (about 3 large)
  • 110 grams super fine white sugar
  • 57 grams white chocolate (melted)
  • 1 tablespoon fancy molasses
  • 1/2 cup unsalted butter (softened)

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, sift together almond flour, confectioners' sugar, cinnamon, ginger, and cloves.
  3. Using a mixer, whip egg whites until foamy; gradually add white sugar until stiff peaks form.
  4. Fold dry ingredients into whipped egg whites carefully to combine; add food coloring if desired.
  5. Pipe small circles onto prepared sheets, leaving space in between. Let rest for 30-60 minutes until they form a skin.
  6. Bake each sheet for about 15-20 minutes until shells are firm. Cool completely before filling with buttercream made from melted white chocolate, butter, confectioners' sugar, molasses, and vanilla.
