  • 500 g boneless chicken (bite-sized pieces)
  • 1½ tbsp ginger-garlic paste
  • 2 green chilies (finely chopped)
  • 1½ tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp garam masala
  • 2 large eggs
  • 2 tbsp cornstarch
  • 2 tbsp rice flour or semolina
  • Oil for deep frying

Instructions

  1. In a mixing bowl, combine chicken, ginger-garlic paste, green chilies, red chili powder, turmeric powder, garam masala, salt, and lemon juice. Marinate for at least 15 minutes.
  2. In another bowl, whisk the eggs until frothy. In a separate plate, mix cornstarch and rice flour.
  3. Dip each marinated chicken piece in the egg mixture and then roll it in the cornstarch-rice flour mix until fully coated.
  4. Heat oil in a deep frying pan over medium heat. Fry coated chicken pieces in batches until golden brown and crispy (about 5–7 minutes).
  5. Remove from oil with a slotted spoon and let drain on paper towels.
