  • 1/2 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 6 apples (peeled and chopped)
  • 2/3 cup brown sugar (for filling)
  • Caramel sauce (for drizzling)
  • 1/2 tsp kosher salt
  • 1 tsp cinnamon
  • 1/3 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tbsp cornstarch
  • 2 tbsp lemon juice
  • 1/2 tsp nutmeg
  • 4 tbsp water
  • 4 tsp cornstarch (mixed with a little bit of water)

Instructions

  1. Prepare the apple filling by melting butter in a saucepan over medium heat. Add chopped apples, brown sugar, cinnamon, and lemon juice. Cook for 5-7 minutes until apples soften. Stir in cornstarch mixture until thickened; let cool.
  2. In a bowl, cream softened butter with both sugars and salt until fluffy. Beat in eggs one at a time, then add vanilla extract.
  3. Combine dry ingredients (flour, baking powder, baking soda, cinnamon) in another bowl. Gradually mix into wet ingredients until combined.
  4. Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheets, flatten slightly, add apple filling, and top with more dough.
  5. Bake for about 10 minutes or until edges are golden brown. Cool before drizzling with caramel sauce.
