  • 8 oz pasta (penne, farfalle, fusilli, or spaghetti)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup basil pesto (store-bought or homemade)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Grated Parmesan cheese for topping

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a skillet over medium heat, add olive oil. Once hot, add halved cherry tomatoes and sauté for about 5-7 minutes until tender.
  3. Add drained pasta to the skillet with tomatoes and pour in basil pesto. Mix well, adding reserved pasta water gradually until desired consistency is reached.
  4. Season with salt and pepper to taste. Serve warm topped with grated Parmesan cheese if desired.
