  • 1 cup chopped pecans
  • 1 cup corn syrup
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 package refrigerated pie crusts (2 crusts)
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a mixing bowl, combine chopped pecans, corn syrup, brown sugar, granulated sugar, eggs, vanilla extract, and salt. Mix until well blended.
  2. Roll out pie crusts on a floured surface and cut out 4-inch rounds using a cookie cutter.
  3. Place 1 tablespoon of filling in the center of half the rounds, moisten edges with water, place another round on top, and seal by pressing edges together.
  4. Heat oil in a deep fryer or large pot to approximately 350°F (175°C).
  5. Fry several pies at once for about 2-3 minutes on each side until golden brown; then remove and drain on a cooling rack.
  6. Dust with powdered sugar before serving.
