Instructions

  1. Cook the fettuccine in a large pot of salted boiling water until al dente. Drain and reserve ½ cup of pasta water.
  2. In a skillet over medium-high heat, warm the olive oil. Add the ground beef, breaking it apart while cooking until browned (about 6–7 minutes). Stir in the onion and garlic; cook until softened (3 minutes).
  3. Season with salt, black pepper, and red pepper flakes if using. Pour in the beef broth and simmer for 2–3 minutes.
  4. Lower the heat to medium; stir in the heavy cream. Simmer for about 5 minutes until slightly thickened.
  5. Combine the drained fettuccine with the sauce and Parmesan cheese, tossing well to coat. Adjust creaminess with reserved pasta water as needed.
