  • 3 tablespoons cold water

  2. In a saucepan, combine heavy cream, whole milk, sugar, and instant coffee or brewed espresso over medium heat; stir until dissolved without boiling.
  3. Remove from heat and mix in the bloomed vegan gelatin until fully dissolved; then add vanilla extract.
  4. Strain the mixture through a fine mesh sieve into a measuring cup and pour into ramekins or dessert glasses.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or until set.
