  • 2 tsp instant coffee powder
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tbsp milk
  • ½ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and instant coffee powder.
  3. In another bowl, cream softened butter and brown sugar until fluffy. Add egg and vanilla; mix until smooth.
  4. Gradually add dry ingredients to wet mixture; stir until combined. Fold in chocolate chips and chill dough for 30 minutes.
  5. Prepare cheesecake filling by mixing cream cheese, powdered sugar, and milk until smooth.
  6. Roll chilled dough into balls, flatten slightly, spoon filling into the center, and encase it before rolling back into a ball.
  7. Bake on the prepared sheet for 12-15 minutes or until edges are golden brown.
  8. Allow cookies to cool before glazing with a mixture of brewed coffee and powdered sugar.
