  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • Coconut milk (enough to cover beef)

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Sauté the chopped onion until translucent.
  2. Add minced garlic and grated ginger; cook for about 1–2 minutes until fragrant.
  3. Stir in red curry paste, turmeric, cinnamon, cumin, and optional chili powder; toast for an additional minute.
  4. Add beef cubes and brown on all sides for about 5–7 minutes.
  5. Pour in enough coconut milk to cover the beef. Bring to a gentle boil, then reduce heat and simmer covered for about 1.5 hours until beef is tender.
