  • 400 g granulated sugar
  • 355 ml fruit-flavored soda (substituting Coca-Cola)
  • 225 g unsalted butter
  • 40 g unsweetened cocoa powder
  • 120 ml buttermilk
  • 2 large eggs
  • 1.5 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • 200 g cream cheese, softened
  • 120 g powdered sugar
  • 240 ml heavy whipping cream
  • 60 g unsalted butter
  • 20 g unsweetened cocoa powder
  • 150 g powdered sugar
  • Optional garnishes: whipped cream, crushed peppermint, cherries, chocolate shavings

Instructions

  1. Preheat your oven to 175°C and grease three 23 cm round cake pans.
  2. In a saucepan, combine fruit-flavored soda, unsalted butter, and cocoa powder. Bring to a boil and then remove from heat.
  3. In a large bowl, whisk together flour and sugar. Pour the hot cocoa mixture over the dry ingredients and stir until smooth.
  4. Add buttermilk, eggs, baking soda, and vanilla extract; mix until fully combined.
  5. Divide batter among the prepared pans and bake for 25–30 minutes until a skewer comes out clean. Cool completely on wire racks.
  6. For the filling, beat cream cheese with powdered sugar and vanilla; fold in whipped cream until fluffy.
  7. Assemble the cake layers with cream cheese filling in between each layer.
  8. For the glaze, melt butter with cocoa powder and fruit-flavored soda; whisk in powdered sugar until smooth.
  9. Pour warm glaze over the assembled cake and garnish as desired.
