  • 1 cup almond flour
  • 3 large egg whites

  • 1 teaspoon ground cinnamon
  • 2 ounces cream cheese
  • 12 tablespoons heavy cream
  • 12 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a food processor, combine almond flour and powdered sugar; sift to remove lumps.
  3. Whip egg whites until foamy, gradually add granulated sugar until stiff peaks form, then mix in vanilla extract.
  4. Gently fold the dry mixture into the meringue until smooth.
  5. Pipe 1 ½-inch rounds onto the baking sheets, tapping to release air bubbles, and let them rest for 30–45 minutes.
  6. Bake for 15–18 minutes until shells lift easily from parchment; cool completely.
  7. For the filling, beat softened butter with powdered sugar and cinnamon until smooth; adjust with heavy cream as necessary.
  8. Fill macaron shells with buttercream and drizzle with cream cheese mixture before refrigerating for at least 24 hours.
