- 2 ½ lbs chicken wings
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 cup apple cider
- 2 tbsp apple cider vinegar
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- 2 apples, thinly sliced
- 1 small fennel bulb or 1 celery stalk, thinly sliced
- ¼ red onion, thinly sliced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt and pepper, to taste
- Optional: chopped parsley or arugula for greens
- Preheat your oven to 400°F (200°C).
- Season chicken wings with salt and pepper; toss in olive oil and arrange on a baking sheet.
- Roast for 35-40 minutes, turning halfway until crispy.
- In a saucepan, combine apple cider, vinegar, brown sugar, Dijon mustard, and garlic. Simmer for 10-12 minutes until thickened.
- Brush glaze over wings and return to oven for an additional 5 minutes to caramelize.
- Toss apple slices with optional ingredients in a bowl and chill until ready to serve.
- Serve hot wings alongside the fresh apple salad.
