  • 2 ½ lbs chicken wings
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 cup apple cider
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 2 apples, thinly sliced
  • 1 small fennel bulb or 1 celery stalk, thinly sliced
  • ¼ red onion, thinly sliced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: chopped parsley or arugula for greens

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken wings with salt and pepper; toss in olive oil and arrange on a baking sheet.
  3. Roast for 35-40 minutes, turning halfway until crispy.
  4. In a saucepan, combine apple cider, vinegar, brown sugar, Dijon mustard, and garlic. Simmer for 10-12 minutes until thickened.
  5. Brush glaze over wings and return to oven for an additional 5 minutes to caramelize.
  6. Toss apple slices with optional ingredients in a bowl and chill until ready to serve.
  7. Serve hot wings alongside the fresh apple salad.
