  • 1 cup hot coffee (or boiling water)
  • 6 ounces chocolate pudding mix
  • 2 cups whole milk (for pudding)
  • 1½ cups unsalted butter (for frosting)
  • 1 cup unsweetened cocoa powder (for frosting)
  • 6 cups powdered sugar (for frosting)
  • ⅔ cup milk (for frosting, add more if needed)
  • 1 teaspoon vanilla extract (for frosting)
  • 26 crushed Oreo cookies (for topping)
  • 10 ounces pectin-based gummy candies (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13 baking pan.
  2. In a stand mixer, combine dry ingredients: sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together wet ingredients: eggs, milk, vegetable oil, and vanilla extract. Add to dry mixture and mix until just combined.
  4. Gradually stir in hot coffee by hand.
  5. Pour batter into the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean. Let cool completely.
  6. Prepare pudding by whisking pudding mix with milk; let sit until thickened.
  7. Spread pudding over the cooled cake and refrigerate for at least 30 minutes.
  8. Make frosting by melting butter and mixing it with cocoa powder; add powdered sugar and milk until smooth.
  9. Frost the cake, top with crushed Oreos and pectin-based gummy candies.
