Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons active dry yeast
  • 1/2 cup warm whole milk
  • 4 large eggs
  • 1 cup unsalted butter (softened)
  • 2 cups whole milk (for custard)
  • 1 tablespoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Prepare the brioche dough by combining warm milk, sugar, and yeast in a bowl. Let it sit for 5 minutes.
  2. Add eggs and softened butter to the mixture, then gradually incorporate flour and salt until smooth.
  3. Allow the dough to rise in a greased bowl for about 1 hour.
  4. For the custard filling, heat milk in a saucepan. In another bowl, mix sugar, egg yolks, cornstarch, and vanilla. Gradually add hot milk to this mixture while whisking continuously until thickened.
  5. Punch down the risen dough, divide into pieces, fill with custard and chocolate chips, shape into balls, and place seam-side down in a greased muffin tin.
  6. Let the brioches rise again for 30 minutes before baking at 350°F (175°C) for about 20 minutes until golden brown.
