  • 34 links hot Italian sausage (or mild)
  • 1 medium onion
  • 1 large red bell pepper
  • 10 pickled cherry peppers
  • 1/4 cup pickling juice from the jar
  • 1/2 cup dry apple vinegar
  • 1 cup low-sodium chicken stock
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh chopped parsley
  • Red chili flakes

Instructions

  1. Season chicken thighs with salt and pepper. Heat vegetable oil in a cast iron skillet over medium heat and sear the chicken until golden brown; remove.
  2. In the same pan, cook the sausage until browned on all sides; remove.
  3. Sauté sliced onion, bell pepper, and chopped garlic until softened.
  4. Stir in pickled cherry peppers and juice; cook for another few minutes.
