  • 2 lbs chicken breast (cutlets)
  • 4 cups cherry tomatoes
  • 4 cloves garlic (minced)
  • 1/2 cup onion (chopped)
  • 2/3 cup broth (chicken or vegetable)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup white apple vinegar
  • 1/2 cup basil

Instructions

  1. Season both sides of the chicken with salt, garlic powder, and black pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 5 minutes on each side until golden brown; remove from pan.
  3. In the same skillet, reduce heat to medium. Sauté onions until soft, then add minced garlic and cook for another minute.
  4. Stir in cherry tomatoes, broth, vinegar, and basil. Scrape the bottom of the pan to mix flavors; let simmer for 5-8 minutes until tomatoes soften.
  5. Return chicken to the skillet; cover and simmer for an additional 2-3 minutes.
