  • 2 lbs Chicken breast (cutlets)
  • 4 cups Cherry tomatoes
  • 4 cloves Garlic (minced)
  • 1/2 cup Onion (chopped)
  • 2/3 cup Broth (chicken or vegetable)
  • 1/3 cup White apple vinegar
  • Fresh Basil
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 2 tsp Kosher salt
  • 1/2 tsp Black pepper

Instructions

  1. Season the chicken with garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook the chicken until golden brown on both sides (about 5 minutes each). Set aside.
  3. In the same skillet, reduce heat to medium and sauté chopped onions until soft and golden.
  4. Add minced garlic and sauté for one additional minute.
  5. Stir in cherry tomatoes, broth, white apple vinegar, and basil. Scrape any bits off the bottom of the pan.
  6. Simmer for 5-8 minutes until tomatoes soften and juices are released.
  7. Return chicken to the skillet and cover; simmer for another 2-3 minutes before serving.
