  • 3 large carrots
  • 1 cup dry French lentils
  • 1 large shallot
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon kosher salt
  • 2 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 cup fresh flat-leaf parsley
  • 34 Medjool dates
  • 2 tablespoons freshly chopped mint
  • 1/4 cup roasted and salted almonds (optional)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, toss sliced carrots and shallots with olive oil, cumin, smoked paprika, cinnamon, honey or maple syrup, and kosher salt. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. In a medium pot, boil salted water. Add lentils and simmer for 20-25 minutes until tender but not mushy; drain excess water.
  4. When lentils are warm, mix them with olive oil, red apple vinegar, Dijon mustard, parsley, olives, dates, nuts (if using), mint, and season to taste.
  5. Serve by spreading hummus in bowls and topping with lentil mixture and roasted carrots.
