  • 1/2 cup unsalted butter
  • 1/3 cup pure maple syrup
  • 1/4 cup light brown sugar (packed)
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 tsp salt (or more to taste)
  • 1/4 tsp baking soda
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Pop popcorn using your preferred method and transfer it to a large mixing bowl.
  3. In a saucepan over medium heat, melt the butter until golden brown and aromatic.
  4. Stir in maple syrup, brown sugar, spices, and salt; let bubble for 2 minutes.
  5. Remove from heat, add baking soda and vanilla, then coat popcorn immediately.
