  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 zucchini, sliced into half-moons
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, cut into wedges

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine smoked paprika, garlic powder, onion powder, thyme, cayenne pepper, salt, and black pepper.
  3. Pat the salmon dry, rub with olive oil, and coat generously with the spice mixture.
  4. Place salmon on one side of the baking sheet.
  5. Toss zucchini, red bell pepper, yellow bell pepper, and red onion with olive oil and seasonings; arrange on the other side of the baking sheet.
