  • 2 1/2 tsp kosher salt
  • 1 1/4 tbsp instant yeast
  • 1/4 cup olive oil
  • 2 cups water
  • 1 tsp vinegar
  • 115 g butter
  • 5 cloves garlic (grated)
  • 4 cups mozzarella cheese
  • 1/2 tsp chili flakes
  • 1/2 tsp dried basil

Instructions

  1. In a mixing bowl of a stand mixer, combine flour, sugar, salt, and yeast. Mix on low until combined.
  2. Add olive oil, water, and vinegar; mix for about 10 minutes until dough is soft and stretchy.
  3. Transfer the dough to a greased bowl, cover it, and let it rise for at least an hour or until doubled in size.
  4. Punch down the risen dough and divide into smaller balls; let rest for 15 minutes.
  5. For the topping, melt butter in a saucepan over medium-low heat with grated garlic; set aside to cool.
  6. Roll each dough ball into disks on a floured surface and transfer to parchment-lined baking sheets.
  7. Brush each disk with the garlic butter mixture and top generously with mozzarella.
  8. Preheat oven to 250°C (482°F) and bake for about 10 minutes until cheese is melted and crust is golden brown.
  9. Sprinkle chili flakes and dried basil before serving.
