  • 2 cups cooked jasmine rice
  • 1 lb boneless, skinless chicken breast
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • Garnishes: 2 green onions, sliced; 1/4 cup chopped cilantro; 1 lime, cut into wedges

Instructions

  1. Prepare the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, and soy sauce in a small bowl. Set aside.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat and cook diced chicken until browned and cooked through (about 5-7 minutes). Remove from skillet.
  3. Add another tablespoon of oil to the skillet; sauté minced garlic for about 30 seconds until fragrant.
  4. Stir in mixed vegetables and cook for 2-3 minutes until tender.
  5. Add cooled jasmine rice and stir-fry for another 2-3 minutes until heated.
  6. Return the chicken to the skillet, pour in the bang bang sauce, and mix well.
  7. Drizzle sesame oil over the dish before serving.
  8. Garnish with sliced green onions, chopped cilantro, and lime wedges.
