  • 20 oz refrigerated cheese tortellini
  • 24 oz tomato basil pasta sauce
  • 10 cloves garlic (minced)
  • 8 oz mushrooms (sliced)
  • 1 medium zucchini (diced)
  • 2 teaspoons Italian seasoning
  • 6 oz shredded mozzarella
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • Salt (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt the butter and sauté the minced garlic, sliced mushrooms, and diced zucchini for about 8-10 minutes until softened.
  3. In a mixing bowl, combine cooked tortellini, tomato basil sauce, sautéed vegetables, Italian seasoning, Parmesan cheese, and salt until well mixed.
  4. Grease a baking dish and transfer the tortellini mixture into it. Top with shredded mozzarella cheese.
  5. Cover the baking dish with foil and bake for about 30 minutes until the cheese is melted and bubbly.
  6. For an added crispy finish, remove the foil and broil for an additional 1-2 minutes.
